Carmen Gran Reserva-Cabernet Sauvignon 2012

Winemaking Details
The grapes were handpicked from our estate vineyards, located over the best alluvial terraces in Alto Maipo Region by the Andes Mountains. Extremely concentrated grapes are the result of old vineyards yielding around 8 ton/ha. Before fermentation the grapes are cold macerated for 10 days at 4ºC, to ensure maximum
retention of primary fruit aromas and to maximize colour extraction. Alcoholic fermentation was carried out in stainless steel tanks at 26º - 27º C. The total maceration period was of 35 days. The total blend was aged in French oak barrels for a period of 12 months, malolactic fermentation occurred naturally in barrels. After bottling, the wine was aged for an additional 6 months prior to its release.

Soil
Cabernet Sauvignon demands good drainage to deliver perfectly ripe tannins delivering elegance and balance. Our “Quillayes” vineyards are planted over the older alluvial terraces of Alto Maipo. Coarse sand and clay within the gravels improve drainage but provide enough water retention for the summer months.                                                                                                                                                                                                                                                                                                              
Climate
This grape variety requires mild/warm temperatures to fully develop its unique blackcurrant and spice flavours. The temperature fluctuation from day to night gives the wine elegant structure and balanced acidity. The proximity of our vineyard to the river enables the winds sweeping in from the Andes to moderate day temperatures, and the high altitude helps to cool down the area at night Alto Maipo is without doubt the best Chilean terror for Cabernet Sauvignon, this wine has successfully harnessed that potential.

Tasting notes
Our Gran Reserva Cabernet Sauvignon has a deep and dark ruby red. The nose is dominated by layers of red fruit aromas of fresh cassis, blackberry, black licorice and cedar that turn supple and elegant. On the mouth is rich and generous but also fresh and vibrant. The wine has tannins that are firm providing structure and depth with a lot of fruit.
